I used the Ma Recipes’ recipe but I also found The Woks of Life to be helpful.

Ingredients

  • 300g plain flour
  • 3g salt
  • 140g spinach juice

Steps

  1. Blend spinach into a juice, if your blender is having trouble add just enough water to help it along. Make sure not to blend longer than you have to.
  2. Combine flour, salt, and spinach juice in a bowl and mix till you have a ball. You can add a tiny amount of water to help form a ball but flour the ball if you do.
  3. Roll out and cut into noodles; I prefer a square shaped noodle but try any shape you like!
  4. Boil for ~5 minutes or until desired chewiness.

Storage

  • Eat immediately
  • Boil, drain, then freeze. Internet tells good indefinitely but best within a month.
  • Hang to dry for 24-36 hours. Internet tells me this can make the noodle even chewier so may need to cook longer.
