
I used the Ma Recipes’ recipe but I also found The Woks of Life to be helpful.
Ingredients
- 300g plain flour
- 3g salt
- 140g spinach juice
Steps
- Blend spinach into a juice, if your blender is having trouble add just enough water to help it along. Make sure not to blend longer than you have to.
- Combine flour, salt, and spinach juice in a bowl and mix till you have a ball. You can add a tiny amount of water to help form a ball but flour the ball if you do.
- Roll out and cut into noodles; I prefer a square shaped noodle but try any shape you like!
- Boil for ~5 minutes or until desired chewiness.
Storage
- Eat immediately
- Boil, drain, then freeze. Internet tells good indefinitely but best within a month.
- Hang to dry for 24-36 hours. Internet tells me this can make the noodle even chewier so may need to cook longer.
