Ingredients
- Rigatoni or Penne noodles
- 8oz spicy Italian sausage
- 1 diced white onion
- 1/4 c vodka
- 28oz can of crushed tomatoes
- 1 tsp smoked paprika
- 1 tbsp Italian seasoning
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 tsp curry powder (optional)
- 1/2 tsp crushed red pepper flake (optional)
- 1-2 pieces of parmesan rind
- 1/4 - 1/2 cup cream
Steps
- Cook noodles.
- Brown Italian sausage.
- Add diced onions and cook till translucent.
- Add seasonings and cook for 30 seconds to 1 minute.
- Add vodka and cook for 1 minute.
- Add crushed tomatoes and parmesan rind.
- Let simmer for 10-20 minutes.
- Add cream till desired color (orange).
- Remove parmesan rind.
- Pour sauce over noodles and serve!
