Ingredients

  • Rigatoni or Penne noodles
  • 8oz spicy Italian sausage
  • 1 diced white onion
  • 1/4 c vodka
  • 28oz can of crushed tomatoes
  • 1 tsp smoked paprika
  • 1 tbsp Italian seasoning
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 tsp curry powder (optional)
  • 1/2 tsp crushed red pepper flake (optional)
  • 1-2 pieces of parmesan rind
  • 1/4 - 1/2 cup cream

Steps

  1. Cook noodles.
  2. Brown Italian sausage.
  3. Add diced onions and cook till translucent.
  4. Add seasonings and cook for 30 seconds to 1 minute.
  5. Add vodka and cook for 1 minute.
  6. Add crushed tomatoes and parmesan rind.
  7. Let simmer for 10-20 minutes.
  8. Add cream till desired color (orange).
  9. Remove parmesan rind.
  10. Pour sauce over noodles and serve!
