Ingredients

  • 1 cup pureed ripe banana
  • 1/4 cup sugar (or to taste)
  • 1/4 cup brown sugar
  • 1 1/2 sifted gluinous rice flour
  • 2 eggs
  • 75g (1/3 cup) melted butter
  • 3/4 cup light canned coconut milk
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • pinch of salt

Steps

  1. Preheat oven to 350F.
  2. Whisk banana, sugar, vanilla, butter, coconut milk, and eggs.
  3. Add baking powder, rice flour, cinnamon, and salt. Whisk till smooth.
  4. Poor into greased square baking dish.
  5. Bake for 45 minutes.
  6. Let cool before slicing.

Notes

  • 1 cup of banana should be 1/2 or 3/4 of a banana, but there’s no such thing as too much banana!
