Ingredients
- 1 cup pureed ripe banana
- 1/4 cup sugar (or to taste)
- 1/4 cup brown sugar
- 1 1/2 sifted gluinous rice flour
- 2 eggs
- 75g (1/3 cup) melted butter
- 3/4 cup light canned coconut milk
- 1 tsp vanilla
- 1 tsp baking powder
- 1 tsp cinnamon
- pinch of salt
Steps
- Preheat oven to 350F.
- Whisk banana, sugar, vanilla, butter, coconut milk, and eggs.
- Add baking powder, rice flour, cinnamon, and salt. Whisk till smooth.
- Poor into greased square baking dish.
- Bake for 45 minutes.
- Let cool before slicing.
Notes
- 1 cup of banana should be 1/2 or 3/4 of a banana, but there’s no such thing as too much banana!
