From Elisa Maclean (learned while living in Paris)

Ingredients

  • 1 3/4 cup Heavy cream
  • 4 egg yolks (beaten)
  • 60g sugar
  • 1 vanilla bean or 1 tsp vanilla
  • 1/4 cup turbinado sugar (1tbsp per)

Steps

  1. Preheat oven to 325F
  2. Mix cream, yolks, sugar, and vanilla
  3. Pour into ramekins (3/4” - 1”)
  4. Place ramekins into high-walled pan filled with water
  5. Bake for 30 minutes: till jiggles like jello
  6. Refrigerate over night
  7. Cover top with sugar and torch, just before eating
